Bibingka

Lately I have been trying a few dessert recipes.  Tonight I decided to try to recreate a Filipino favorite - Bibingka.  

Bibingka is a rice cake mainly consisting of coconut milk and sweet rice flour.  In the Philippines it is normally baked in a mold or pan lined with banana leaves.

My version is baked in a regular cake pan and topped with sharp cheddar cheese.

I am very happy with the outcome and my taste testers seem to have enjoyed it.
