Bibingka
Lately I have been trying a few dessert recipes. Tonight I decided to try to recreate a Filipino favorite - Bibingka.
Bibingka is a rice cake mainly consisting of coconut milk and sweet rice flour. In the Philippines it is normally baked in a mold or pan lined with banana leaves.
My version is baked in a regular cake pan and topped with sharp cheddar cheese.
I am very happy with the outcome and my taste testers seem to have enjoyed it.
Yummy! Looked and tasted lusty! Can't wait for your next lusty sweet!
ReplyDeleteI could not stop slicing off pieces of this confectionary delight!
